15-Minute Strawberry Spinach Salad

Strawberry Spinach Salad is a quick, tasty, and nutritious recipe that only takes 15 minutes to prepare! This salad is a wonderful side dish for any weekday dinner because it has Feta cheese, Pecans, and a straightforward Balsamic dressing. It is also a hit at many celebrations, picnics, potlucks, and other get-togethers with friends and family!

Ingredients

Balsamic Dressing

  • 1 cup balsamic vinegar 
  • ¼ cup honey or brown sugar

Spinach Strawberry Salad

  • 10 oz baby spinach fresh
  • 3 cups strawberries cleaned and hulled, sliced
  • 1 cup blueberries
  • ⅓ cup feta cheese crumbled
  • 1 cup pecans toasted, some of them chopped

How to make spinach strawberry salad

Salad Dressing - Balsamic Glaze

  1. Balsamic vinegar and honey are heated in a small pot over medium heat. 
  2. Stirring often, cook for about 10 minutes or until the mixture thickens and reduces by roughly half. Bring to a mild boil.
  3. Balsamic glaze should be taken off the heat and poured into a heat-resistant bowl to cool. As the glaze cools, it will get thicker.
  4. The consistency must be thick enough to cover the back of a spoon but not excessively so.

Salad

  1. Combine all of the salad's components, excluding the pecans, in a big bowl. Combine by tossing.
  2. Separate the salad into serving bowls.
  3. Add roasted nuts, both whole and chopped, to each serving bowl.
  4. Pour balsamic glaze over the top of the salad in each bowl.

Variations and substitutions

  • Greens. Use arugula in place of spinach or combine arugula with spinach for a spicier dish. Kale, lettuce, or romaine lettuce are more options.
  • Berries. Fresh blueberries, blackberries, raspberries, and strawberries all work well in this salad. Pick your preferred berry!
  • Nuts. Pecans give the salad a wonderful crunch and a light nutty taste. In the preheated oven, toast the pecans for 10 minutes at 350 F while keeping a close eye to ensure the nuts don't burn. Walnuts and cashews are further options. If you don't want to use nuts, you can also add toasted sunflower seeds.
  • Cheese. This salad is versatile when it comes to cheese. Feta, parmesan, goat, blue, and Cotija cheese are some of my favorites.
  • Include protein. To make the salad a complete dinner, add cooked chicken or shrimp! You can add grilled or sauteed shrimp, rotisserie chicken, or both.
