Around here, fruit salads are a fairly dependable indicator of spring and warmer weather. We enjoy fruit in our home and eat it all year long, but in the spring, our refrigerator and counters are overflowing with fresh fruit.

I adore using it to make different recipes and adore how colorful it is.

I could only think of packing fruit or ice pops, and I reasoned that fruit would travel much better in temperatures of 96 degrees. 

I must admit that it was a wise choice, and although I can't be certain, I'm rather certain that every last drop was consumed.

Our departure was a little early. The moment Chad suggested ice cream, we were in the van heading to Dairy Queen. Well, priorities.  LOL

I was saying...  I made the decision to test the fruit salad recipe the very following day, and I have to admit that the second recipe test had me do the "happy dance" and receive a few pats on the back while yelling, "I AM A GENIUS! Oh my goodness, this is beautiful.

  • 12 mandarin oranges, divided (for dressing and salad)
  • 2 cup strawberries, sliced
  • 5 kiwi
  • 1 pineapple, peeled, cored, cut into bite-size chunks
  • 3 mangoes, peeled, pitted, cut into bite-size chunks

Citrus Poppy Seed Dressing

  • 1 medium lemon
  • 1 lime
  • 1/4 cup honey
  • 1/2 teaspoon ginger paste, or grated fresh ginger
  • 1/2 teaspoon poppy seeds

Instructions

  1. Make the dressing for fruit salad: Lemon, lime, and 2 mandarin oranges should be washed and dried.
  2. With a zester or fine grater, zest the citrus that has been rinsed and dried. Add to a small bowl or measuring cup that holds 1 cup.
  3. Each fruit should be cut in half, with the juice squeezed into a measuring cup. You ought to receive roughly 1/2 cup of juice.
  4. To the juice mixture, add honey, ginger, and poppy seeds. Whisk to blend. If serving later than a day, set aside or cover and chill.
  5. Remaining fruit preparation: Slice kiwi and strawberries. Divvy up any remaining oranges. Mango and pineapple are chopped into bite-sized bits after being peeled, cored, and pitted.
  6. Add fruit to a big bowl. Toss the fruit in the dressing by pouring it on top. 30 minutes or so before serving, place in the refrigerator.
