Blackened Chicken Cobb Salad

Blackened Chicken Cobb Salad is flavorful and incredibly easy to make. Plus, it's low-carb and keto-friendly, and ideal for meal preparation.

As you are aware, my goal is to turn salads into a tantalizing, in-demand meal.

We've all been in the predicament of believing that ordering a salad at a restaurant was the "healthy choice." And in the end, it turned out to be a bland salad that was drowned in dressing but still had a lot of calories, sugar, and fat. UGH!

This charred chicken salad, though, couldn't be more distinctive. Although it is bursting with taste, the flavors are portioned out so that the salad is still incredibly healthful.

This salad is a fantastic meal-sized salad for lunch or dinner since it features a perfect balance of lean protein, healthy fats, and vegetables. Additionally, it's quite simple to construct and customizable.

I meal prep this salad when using the Faster Way to Fat Loss program, which calls for two low carb days per week, as it is the tastiest low-carb dish! It also really fills me up.

What is Blackened Seasoning?

I definitely recommend blackened chicken, shrimp, salmon, or anything else if you've never eaten it. It transforms what may otherwise be a tasteless protein into a flavor explosion in every bite while adding very little extra fat or calories. The dish is improved by more than 20 levels with just a simple spice blend.

Additionally, this dinner may be prepared quickly because there is no need to marinade in preparation. More often than I'd like to confess, I set out to prepare a lunch or dinner and find out an hour before that the dish requires for marinating for at least eight hours. Don't regularly have time for that!

You can use a pre-made mixture, or make your own blackened seasoning at home with just a few basic spices.

Chicken Cobb Salad Ingredients

BLACKENED CHICKEN:

  • 3/4 teaspoon paprika
  • 3/4 teaspoon chili powder
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • Pinch of cayenne pepper
  • 1 Tablespoon olive oil, if needed
  • 1 lb boneless skinless chicken breasts, 3-4 pieces

SALAD:

  • 12 cups baby spinach or chopped romaine
  • 4 large eggs, hard-boiled, peeled and sliced
  • 1 cup grape tomatoes, halved
  • 1 large cucumber, sliced
  • 1/2 cup diced red onion
  • 6 slices cooked bacon, crumbled
  • 1/2 cup crumbled blue cheese, optional
  • 1 –2 avocados, sliced

RED WINE VINAIGRETTE:

  • 1/3 cup red wine vinegar
  • 1 Tablespoon Dijon mustard
  • 1 teaspoon maple syrup or honey
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup extra virgin olive oil

Instructions 

  1. Take the chicken out of the packaging and blot it dry with paper towels to prepare it. Put the following seasonings in a small bowl: paprika, garlic powder, chili powder, sea salt, black pepper, and cayenne pepper. Apply the spice mixture to each chicken breast.
  2. Cooking chicken: You can either grill or sear the chicken on a stovetop or on an indoor or outdoor grill. 1 Tablespoon of olive oil over medium heat in a big skillet for searing. Place hot oil with chicken breasts in it. Chicken should be cooked for about 6-7 minutes on each side, or until the juices run clear. Take the chicken out of the skillet and set it aside to cool for five minutes before slicing it for the salad. You can complete this step a day beforehand.

Can You Prep this Chicken Salad Ahead of Time?

Yes! The various salad ingredients can be prepared in advance and assembled just before serving. The ingredients can alternatively be combined (except from the avocado and dressing), divided into serving-sized portions, stored in the refrigerator, and then the avocado and dressing are added just before serving.

Can You Use a Different Dressing?

Yes! Although the red wine vinaigrette is quite light and lets the salad's components shine, feel free to try other types of dressing. I have a ton of different recipes for nutritious salad dressings.

I'm currently addicted to my turmeric tahini dressing, and it tastes great drizzled over this blackened chicken salad. Additionally, if you're pressed for time, you can always use your preferred store-bought dressing or simply top your salad with some vinegar, olive oil, salt, and pepper. Given how tasty the vegetables in this salad are, you really don't need much dressing!
