Apple Walnut Salad
Years ago, I got the bright notion to add blueberries to the apple walnut salad I've been preparing for years. It was amazing!
In this salad, the vibrant greens contrast with the sweet chew and pop of the apples and blueberries, the creamy goat cheese, and the salty crunch of the nuts. The sweet-and-sour dressing gives it a satisfying finish.
I've been preparing this salad frequently for the past few months, so I'm happy to finally be able to share it with you.
Grilled, roasted, or Last Minute Chicken would be a terrific addition to this salad if you want to make it into a filling dish.
Or, you may add more goat cheese and nuts if, like me, you simply need a bit more protein to make the dish a meal.
I can easily eat this Apple Walnut Salad for lunch or dinner and still feel satisfied.
Kitchen Tip: I prepare this recipe using this knife. (FYI, I've been using that knife for more years than I care to remember and it's a screaming deal for the quality.)
Blueberry Apple Walnut Salad Ingredients
- 2 cups spring mix
- 1 medium apple (about 1 cup, thinly sliced pieces)
- 1-2 oz goat cheese or gorgonzola
- 1 tbsp chopped walnuts
- 1/4 cup fresh blueberries
- 1 tbsp chopped fresh parsley
- Honey Balsamic Vinaigrette
Instructions
- To a sizable bowl or tray, add the spring mix, apple slices, cheese, walnuts, blueberries, and parsley.
- Add vinaigrette and toss to coat after drizzle. Serve right away.
