With little hassle, this chicken fajita salad delivers huge taste. It has some of the same ingredients as our chicken avocado salad, but some others are different. Additionally, we've added our own handmade chipotle ranch dressing to give it an extra smokey bite. If you want the flavors of a chicken fajita without the tortillas, this salad is fantastic.

It is loaded with seasoned chicken, onions, peppers, and ripe avocados that have been sautéed. If eaten within a couple of days, this salad is a terrific alternative for meal planning.

Ingredients

  • 2 chicken breasts - boneless, skinless, thinly sliced similar to cutlets
  • 2 teaspoons fajita seasoning - store bought or homemade
  • 1 tablespoon avocado oil
  • 2 cups bell peppers - any variety, cut into thin strips
  • ½ cup white onion - thinly sliced
  • 4 cups romaine lettuce - chopped
  • 1 avocado - cut into slices
  • 1 tablespoon lime juice - freshly squeezed
  • ½ cup chipotle ranch dressing

How to make chicken fajita salad:

Season the chicken first. I like to use fajita seasoning, which can be either homemade or purchased. Simply make use of what you have. Over medium heat, preheat a flat or cast-iron skillet. Add the oil and the chicken to the heated pan.
