CILANTRO LIME SLAW

Cilantro Lime Slaw is quick to prepare in only 10 minutes, tastes especially light and fresh, and works well as a zesty side dish or as a topping for tacos, burgers, sandwiches, and other dishes.

We must first discuss this coleslaw, though.

It's my go-to, always-in-the-back-of-the-fridge, simple-breezy, fresh-and-flavorful cilantro lime slaw recipe, and it somehow magically pairs with just about everything. When we grill outside in the summer, I usually just make it as a simple side dish, especially when there is Mexican or BBQ sauce involved. However, it's also excellent as a topping for pretty much any type of taco, including those with fish, shrimp, carnitas, sofritas, barbacoa, chicken, and more. Additionally, it tastes fantastic blended into buddah bowls or burrito bowls, as well as a topping for hamburgers or sandwiches. Or, hey, if you want to possibly include a protein and avocado in there as well, this slaw can be quickly turned into an entree.

However, the main reason I adore this cilantro lime slaw is that it's simple to make, tastes incredibly fresh, and is healthful. Simply buy a package of pre-made coleslaw mix at the store (or create your own from scratch by shredding some cabbage and carrots). To make the sauce, simply add a few basic components to the blender. The most delectable, creamy, tangy coleslaw can be prepared in less than 10 minutes by tossing everything together.

CILANTRO LIME SLAW INGREDIENTS:

  • 1 cup plain Greek yogurt*
  • 1/2 cup tightly-packed fresh cilantro
  • 1/4 cup freshly-squeezed lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-cracked black pepper
  • 3 green onions (just the green parts)
  • 2 garlic cloves
  • (optional) 1 jalapeño or serrano pepper, stemmed and cored
  • 1 (14-ounce) bag cole slaw mix* (about 7–8 cups)

HOW TO MAKE COLESLAW:


To prepare this simple coleslaw recipe, just...

  1. Making the dressing for the cabbage: In a blender or food processor, add the Greek yogurt, cilantro, lime juice, cumin, salt, pepper, jalapeo (if using), green onions, and garlic. Pulse just long enough to incorporate the ingredients. (Alternatively, if you'd rather not to use a blender, you may simply chop the ingredients very finely before stirring everything together.)
  2. Combine all of the ingredients. The coleslaw mix and dressing should be blended in a big bowl.
  3. Serve.  Serve right away, or cover and store in the fridge for up to a day.

VARIATIONS

Want to try something different with this recipe for homemade coleslaw? If you'd like to:
  • Change the creamy base: If you want a delicious mayo-based coleslaw, feel free to substitute mayo for the Greek yogurt or combine the two ingredients 50/50. Or feel free to use sour cream for the Greek yogurt, or combine the two ingredients 50/50, for an even tangier slaw.
  • Add sweetness: Feel free to add 1-2 teaspoons of honey to the coleslaw dressing for a little sweeter slaw.
  • Increase the smoke: Add 1 chipotle pepper in adobe sauce to the dressing for a smokier slaw. (It's fantastic!)
  • Include avocado: Avocado is always a wonderful option to include.
  • Add more vegetables: You are welcome to add some thinly-sliced bell peppers, red onions, jicama, and/or radishes to the coleslaw mixture to gussy it up with more vegetables.
  • Add nuts: To give this slaw even more crunch, try adding some pepitas or sunflower seeds.
