Creamy Cucumber Tomato Salad is a quick side dish made with a straightforward sour cream dressing. It goes well with almost any main course and is quite simple to create!
I was wanting this crisp and energizing salad over the weekend because of the unusually mild weather (spring and summer can't come soon enough!). My traditional cucumber-tomato salad now has a creamy and warming twist, and it couldn't be simpler!
Creamy Cucumber Tomato Salad Ingredients
- 4 cups sliced English cucumber 1 ½ to 2 cucumbers
- ½ cup sliced red onion
- 1 pint grape or cherry tomatoes sliced in half
- ⅓ cup sour cream
- 3 tablespoons mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- ¾ teaspoon granulated sugar
- 1 ½ teaspoons chopped fresh dill or ½ teaspoon dried
- ¼ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- Combine tomatoes, onion, and cucumber slices in a big basin. Place aside.
- In a large measuring cup or small bowl, combine the sour cream, mayonnaise, olive oil, vinegar, sugar, dill, garlic powder, salt, and pepper.
- Vegetables should be dressed and then gently stirred to ensure an even coating. If needed, season with more salt and pepper.
Notes
- You can peel or unpeel a cucumber.
- Grape or cherry tomatoes can be replaced with 2 cups of diced or chopped tomatoes.
- Red onion can be swapped out for white onion.
- Feel free to change the seasonings to suit your tastes.
