I was wanting this crisp and energizing salad over the weekend because of the unusually mild weather (spring and summer can't come soon enough!). My traditional cucumber-tomato salad now has a creamy and warming twist, and it couldn't be simpler!

Creamy Cucumber Tomato Salad Ingredients 

Creamy Cucumber Tomato Salad
  • 4 cups sliced English cucumber 1 ½ to 2 cucumbers
  • ½ cup sliced red onion
  • 1 pint grape or cherry tomatoes sliced in half
  • ⅓ cup sour cream
  • 3 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • ¾ teaspoon granulated sugar
  • 1 ½ teaspoons chopped fresh dill or ½ teaspoon dried
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Creamy Cucumber Tomato Salad
  1. Combine tomatoes, onion, and cucumber slices in a big basin. Place aside.
  2. In a large measuring cup or small bowl, combine the sour cream, mayonnaise, olive oil, vinegar, sugar, dill, garlic powder, salt, and pepper.
  3. Vegetables should be dressed and then gently stirred to ensure an even coating. If needed, season with more salt and pepper.

Notes

  • You can peel or unpeel a cucumber.
  • Grape or cherry tomatoes can be replaced with 2 cups of diced or chopped tomatoes.
  • Red onion can be swapped out for white onion.
  • Feel free to change the seasonings to suit your tastes.
