Tomato and Cucumber Salad Recipe Notes

  • Plan ahead. The inclination of cucumbers is to leak a lot of fluids. Sliced cucumbers should be placed on a serving dish with 1 teaspoon of salt to prevent a watery salad.
  • Pour out the liquid after 2 hours in the refrigerator (do not rinse). There will be enough salt leftover, so do not add any more. 
  • If you like, peel. In order to give a little bit more crunch and make the recipe for tomato cucumber salad easier, we don't peel the cucumbers.
  • However, you can peel them first and then slice them if you like.
  • Make-ahead advice In a mason jar, make the cucumber tomato salad dressing and put it in the fridge.
  • On the day you intend to serve it, give it a thorough shake before tossing the salad with it.

Cucumber Tomato Salad Ingredients

  • 1/4 cup fresh lemon juice
  • 2 tablespoons granulated sugar
  • 2 tablespoons extra light olive oil
  • 1/2 tablespoon poppy seeds
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon onion powder
  • 2 English cucumbers, cut into half coins
  • 2 cups grape tomatoes, halved
  • 1/2 red onion, sliced thin

Instructions

  1. In a sizable bowl, mix the lemon juice, sugar, olive oil, poppy seeds, mustard, garlic, salt, and onion powder. Mixture must be thoroughly mixed by whisking.
  2. To the bowl, add cucumbers, tomatoes, and onions. Combine by tossing.
  3. Up to serving time, chill. Enjoy!
