I believe the formal start of summer is June 21 or something similar. Let's be honest though. Memorial Day has passed, classes are out of session, and Austin, Texas recently saw its first day with temperatures above 100 degrees.
Greek cucumber salad is something I'll eat year-round, but there's something about its zest, airiness, and freshness that makes me think of summer when I think of this dish.
Plus, it makes the ideal distinctive SUMMER side dish for barbecues and cookouts.

Greek Cucumber Salad Ingredients
- 2 cucumbers
- 4 roma tomatoes
- ~1 cup sliced red onions
- 1/2 cup crumbled feta
- 1/2 cup canned/bottled black olives drained
Greek Lemon Vinaigrette
- 1/4 cup olive oil
- 1/4 cup lemon juice juiced from fresh lemon
- 2 tsp dried oregano
- 2 tsp pure maple syrup or honey, sugar
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/4 tsp black pepper
How to make Greek Cucumber Salad
- Mix all vinaigrette ingredients thoroughly in a small bow.
- Slice red onions, tomatoes, and cucumbers. Black olives should be drained and cut in half. Put everything in a sizable bowl (one that will allow for easy tossing).
- Add vinaigrette and blend by adding a drizzle. Add some feta crumbles.
- Dispense and savor!
Storage Tips
The best approach to store Greek cucumber salad is to keep the dressing and the fruit separate from one another. Make sure to keep everything in the refrigerator in a container with a tight seal.
If you've already combined the dressing with the Greek cucumber salad, you can keep it there for up to 24 hours in a closed container. If you don't eat it right away, it will turn soggy.
