Mediterranean Hummus Bowl

INGREDIENTS TO MAKE THE HUMMUS BOWL

For the Hummus

  • 15 ounce can chickpeas
  • 3 tablespoons lemon juice
  • 2 tablespoons tahini
  • 1-2 garlic cloves
  • ½ teaspoon salt
  • 2-3 ice cubes

For Assembly

  • 1 cup cooked quinoa
  • 2 cups baby spinach
  • ½ red onion sliced
  • ½ pint Cherry tomatoes quartered
  • ½ English cucumbers sliced
  • 1 cup can chickpeas
  • ½ cup olives pitted
  • Chopped parsley for serving
  • Extra virgin olive oil for serving

HOW TO MAKE THE HUMMUS BOWL:

  1. To generate a creamy texture, place chickpeas in a bowl of water and rub them together to remove the skin.
  2. Garbanzo beans should be drained and added to a food processor. They should be blended on their own until they resemble powder, scraping the sides as necessary.
  3. Add a few ice cubes, the salt, garlic cloves, lemon juice, tahini, and blend for about five minutes until smooth. Add extra salt or lemon juice as needed to taste and make adjustments.
  4. Put some hummus on a plate or dish, and use the back of a spoon to swirl it about.
  5. Place the remaining ingredients however you choose on top of the hummus.

TIPS FOR MAKING HUMMUS BOWLS

  • Assemble the salads just before serving. This way the hummus doesn’t add too much moisture to the other fresh ingredients, keeping everything more crisp and presentable.
  • Don’t add any dressing. You might be tempted to add dressing, but I recommend keeping the focus on the hummus, which acts like a thick dressing. I would definitely recommend adding olive oil though!
  • Cut the salad ingredients into similar sized pieces so that they are easy to eat. And when I pack this for meal prep, I just shake up my Tupperware and everything is evenly coated with the hummus
