PORTOBELLO MUSHROOM FAJITAS (30 MINUTE)

Portobello Mushroom Fajitas are such a delicious, filling supper. Additionally, they can be made in 30 minutes. Afterward, customize them with your own customized toppings!

These simple Portobello fajitas include some of my favorite foods, including Mexican cuisine, mushrooms, and vibrant vegetables.

Portobello mushrooms are perfect in these gratifying veggie fajitas because of their wonderful, tender, "meaty" texture.

Ingredients for Portobello Mushroom Fajitas

  •  2-3 large portobello mushrooms
  • 2 bell peppers
  • 1 onion
  • 1 Tbsp. taco seasoning (recipe below)
  • Juice of 1/2 lime (about 1 Tbsp.)
  • 1 Tbsp. olive oil (or water/broth for oil-free)
  • 6 corn tortillas (or other tortilla)

Toppings of choice:

  • Avocado, guacamole, salsa, vegan cheese, vegan sour cream, nutritional yeast

For the taco seasoning:

  • 1 Tbsp. chili powder
  • 1 1/2 tsp. ground cumin
  • 1 tsp. dried oregano
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. paprika (I like smoked)
  • 1/2 tsp. salt
  • 1/4 tsp. cayenne pepper (optional – if you like heat)

Instructions

  1. To prepare mushrooms, cut off the stems, scoop out any needed gills, and clean the tops. Slices should be roughly 1/3 inch thick.
  2. Slice the onion and bell peppers very thin.
  3. Put all the ingredients for the taco seasoning in a basin and stir to combine.
  4. Add the peppers, onions, and 1 tablespoon of olive oil to a large skillet set over medium heat. two minutes to cook.
  5. Add sliced mushrooms and one tablespoon of taco spice.
  6. Cook for a further 7-8 minutes, stirring occasionally, or until softened. Stir with 1/2 lime juice, if desired. Salt as needed, then turn off the heat.
  7. Prepare your preferred toppings while the vegetables are cooking. If desired, warm the tortillas.
  8. Serve with your preferred toppings after spooning the fajita mixture into the center of the tortillas.
