Ranch Pasta Salad

Ranch Pasta Salad is a wonderful side dish! Pasta that has been cooked is combined with fresh herbs and vegetables before being tossed in a creamy ranch dressing.

You will adore this macaroni salad recipe if, like me, you were raised on ranch dressing. Although unexpected to be vegetarian (and easily made vegan), it is also gluten-free and creamy.

This recipe is sure to be a hit whether you're searching for a straightforward light lunch or the ideal summer pasta salad to bring to a potluck.

It’s so Easy to Whip Up!

Even with the homemade ranch dressing, making this spaghetti salad with ranch dressing is very simple.

The pasta only needs to be boiled, the vegetables chopped, the dressing whisked, and then everything may be combined! To allow the flavors to mingle and the salad to chill in the fridge, I like to prepare it a few hours in advance.

Ranch Pasta Salad Ingredients

  • 8 ounces gluten-free pasta, (I used Banza Rotini)
  • 1 cup diced cucumber
  • 1 cup bite-size broccoli florets
  • ½ small red bell pepper, diced
  • ½ cup diced sweet vidalia onion

Creamy ranch dressing

  • ½ cup plain Greek yogurt
  • ½ cup mayonnaise, (I used avocado oil mayo)
  • ¼ cup minced fresh dill
  • ¼ cup minced fresh chives
  • 2 tablespoons white vinegar
  • ½ teaspoon garlic salt
  • ½ teaspoon onion powder
  • ¼ teaspoon freshly cracked black pepper
  • ⅛ teaspoon sea salt

Instructions

  1. Cook pasta: Prepare pasta as directed on the package. Drain and chill by rinsing with cold water.
  2. To make the dressing, mix the ingredients in a medium bowl until combined and creamy. Keep chilled until you're ready to use.
  3. Toss: Place the pasta, cucumber, broccoli, bell pepper, and onion in a large bowl.
  4. Dress it up: Toss the pasta salad with the dressing after pouring it over it. Add extra salt and pepper if desired after tasting. Serve right away or chill for a few hours in a container with a lid before serving.
