SUPERFOOD BROCCOLI & BLUEBERRY PROTEIN SALAD

Broccoli & Blueberry Protein Super Salad - Simple ingredients like fresh blueberries, carrots, sweet dried apricots, almonds, and sunflower seeds are used to make a delicious and healthful broccoli salad recipe. The light tahini dressing on this quick, vegetarian broccoli salad makes it ideal for summer celebrations or dinner preparation.

Ingredients

For the salad:

  •  5 cups fresh broccoli florets
  •  1 ¼ cups blueberries
  •  1 cup carrots, shredded
  •  ½ cup turkish apricots, shredded
  •  ⅓ cup red onion, finely diced
  •  ½ cup cilantro, finely chopped
  •  ¼ cup flat leaf parsley, finely chopped
  •  ½ cup toasted almonds, sliced
  •  ¼ cup roasted sunflower seeds

For the dressing:

  •  3 tbsp tahini
  •  3 tbsp 1/2 lemon, juiced
  •  2 tbsp warm water
  •  ½ tbsp pure maple syrup
  •  1 garlic clove, minced
  •  ¼ tsp salt, plus more to taste
  •  freshly ground black pepper

Instructions

  1. Finely chopped broccoli, blueberries, carrots, sliced apricots, red onion, cilantro, parsley, roasted almonds, and sunflower seeds should all be combined in a big bowl. Place aside.
  2. In a separate bowl, whisk together the tahini, lemon juice, water, maple syrup, garlic, salt, and pepper to make the dressing. Drizzle over salad right away, then combine. Add more roasted almonds and cilantro as a garnish. Serve right away or store in the refrigerator for later. When prepared ahead of time, salad keeps nicely for up to 5 days.
