Zesty Lime Shrimp and Avocado Salad
Made with fresh ingredients such as shrimp, avocados, tomatoes, red onion, cilantro, and diced jalapenos that have been mixed with freshly squeezed lime juice and a tiny bit of olive oil.
Even if I quadruple the recipe, this is my go-to dish to bring to all of my friends' parties because it always sells out quickly! In fact, some people would argue that it is a ceviche because I used cooked shrimp rather than raw shrimp cooked in lime juice. It is delicious and suitable for all kinds of diets, including Whole30, Paleo, Keto, gluten-free, dairy-free, and pescatarian ones.
Notes
- Serve this as a light meal or an appetizer. This can be served over a tostada to provide more substance.
- I normally double or quadruple the recipe if I'm making it for a party.
- Avocado and cilantro can be added right before serving if you prepare everything ahead of time and store it in the refrigerator.
- You can roast raw shrimp in the oven if you're using them. Heat the oven to 400°F before roasting. Apply cooking spray to 2 large nonstick baking sheets, add the shrimp, and mix with a little extra virgin olive oil. For 6 to 8 minutes, or until the shrimp turn opaque, roast the shrimp in a single layer. After letting it cool, go ahead.
Zesty Lime Shrimp and Avocado Salad Ingredients
- 1/4 cup chopped red onion
- 2 limes, juice of
- 1 tsp olive oil
- 1/4 tsp kosher salt, black pepper to taste
- 1 lb jumbo cooked, peeled shrimp, chopped*
- 1 medium tomato, diced
- 1 medium hass avocado, diced (about 5 oz)
- 1 jalapeno, seeds removed, diced fine
- 1 tbsp chopped cilantro
Instructions
- Combine the red onion, lime juice, olive oil, salt, and pepper in a small bowl. To soften the onion flavor, give them at least 5 minutes to marinade.
- Combine shrimp, avocado, tomato, and jalapenos in a big bowl.
- Combine all the ingredients, then gently toss in the cilantro. To taste, adjust the salt and pepper.
