While you can use any oven-proof skillet, I love to use my cast-iron skillet for this chicken fajita casserole. If you don't have a cast iron skillet, transfer to a baking dish.

You can increase healthy fat content by adding avocado or cooking in additional olive oil. You can also substitute chicken thighs for chicken breasts.
Fajita Casserole ingredients
Here are the ingredients you will need to make this healthy chicken fajita casserole.
- Olive Oil
- Chicken Thighs - boneless skinless thighs, but you can also use chicken breast too!
- Bell Peppers - use any favorite color. I love using different colors.
- Yellow Onion - While I used a yellow onion, you could also use a sweet, white, or red onion.
- Homemade Fajita Seasoning Recipe or Copycat Taco Seasoning Mix Recipe - you can use either healthy seasoning mix. I highly recommend you make your own seasoning mix - it's easy, inexpensive, and much healthier than store-bought.
- Sour Cream
- Cream Cheese
- Shredded Cheddar Cheese - use mild or sharp shredded cheese - whichever you prefer. Substitute pepper jack cheese if you it spicy!
- Optional for Serving: avocado slices, shredded cheese, guacamole, fresh cilantro, or salsa. Don't forget hot sauce for the spicy lovers! ๐
How to make Chicken Fajita Casserole
Here's how to make this easy chicken fajita casserole:
Cook The Chicken
Make the homemade fajita seasoning or taco seasoning.
Preheat the oven to 350 degrees F.
Preheat olive oil in an oven-proof skillet over medium heat. Saute the chicken thighs (or chicken breast) until done.
Tip: the safe cooking temperature of chicken is 165ยบ
Remove the chicken from the skillet and set it aside.
Saute Onion and Peppers
Add onions and peppers and saute until tender, about 3 to 5 minutes, or until cooked to your desired tenderness.
Add The Seasoning
Add chicken back to the pan.
Stir in the fajita seasoning, sour cream, and cream cheese. Mix well.
Bake
Sprinkle the top with the shredded cheddar cheese and bake in the oven for 15 to 20 minutes or until cheese is bubbly.
How Do You Cut Chicken Breast for Chicken Fajitas?
For traditional fajitas, cut chicken breast into thin 1/2" strips sliced horizontally, cutting against the grain.
Keep in mind that the smaller the pieces, the quicker they will cook so you may need to shorten your cooking time as recommended by the recipe instructions.
