- Kewpie mayo, toasted sesame seeds, bonito flakes, and/or 2 chopped green onions as optional garnishes
Sauce
- Dark soy sauce, 1 tablespoon
- 1 tablespoon oyster sauce
- 1/9 cup mirin
- 1-tablespoon brown sugar
- 1 teaspoon of optional Gochugaru (Korean chili flakes) or red pepper flakes
Instructions
- Add salt and pepper to the shrimp or any protein of your choice. In a small bowl, combine all the sauce ingredients.
- Use a pair of chopsticks to carefully loosen the udon noodles after soaking them in boiling water for approximately a minute to prepare them. Drain and set aside after rinsing with cool water.
- In a wok or sizable pan, heat oil over medium-high heat before adding the shrimp or any protein of your choice. Cook until opaque for roughly 2 minutes. Take out and place aside.
- The same wok should be oiled, then the onion and garlic should be cooked until fragrant. Cook the mushrooms, cabbage, and carrot for an additional two to three minutes.
- Toss the udon noodles with the sauce, cooked shrimp, and sauce until they are thoroughly coated. Green onions should be added and combined. Enjoy after garnishing!
