Yaki Udon Ingredients

  • two servings (500g) of frozen udon noodles
  • 2 tbsp of frying oil, divided
  • thinly sliced chicken, beef, pig, or beef; bacon; tofu; or additional vegetables.
  • sliced half an onion, medium
  • 2 minced garlic cloves
  • 1 cup shredded cabbage
  • 1/4 cup julienned carrot
  • 3 sliced mushrooms
  • Kewpie mayo, toasted sesame seeds, bonito flakes, and/or 2 chopped green onions as optional garnishes

Sauce

  • Dark soy sauce, 1 tablespoon
  • 1 tablespoon oyster sauce
  • 1/9 cup mirin
  • 1-tablespoon brown sugar
  • 1 teaspoon of optional Gochugaru (Korean chili flakes) or red pepper flakes

Instructions

  1. Add salt and pepper to the shrimp or any protein of your choice. In a small bowl, combine all the sauce ingredients.
  2. Use a pair of chopsticks to carefully loosen the udon noodles after soaking them in boiling water for approximately a minute to prepare them. Drain and set aside after rinsing with cool water.
  3. In a wok or sizable pan, heat oil over medium-high heat before adding the shrimp or any protein of your choice. Cook until opaque for roughly 2 minutes. Take out and place aside.
  4. The same wok should be oiled, then the onion and garlic should be cooked until fragrant. Cook the mushrooms, cabbage, and carrot for an additional two to three minutes.
  5. Toss the udon noodles with the sauce, cooked shrimp, and sauce until they are thoroughly coated. Green onions should be added and combined. Enjoy after garnishing!
