19 Fresh Summer Salad Recipes

Summertime greetings! The produce is fresh, the air is warm, and the bees are humming.

Without a question, my favorite aspect of the season is the enormous variety of fresh fruit. There is nothing better than walking out to the garden, collecting whatever is ripe, and using it that night for dinner.

In my humble view, salads are the finest way to use produce. I love salads, and although though I eat them all year round, summer is my favorite time of year to consume them.

It can be challenging to locate unique or interesting salad recipes at times. I wanted to create this list for this purpose.

Our seasonal fresh produce deserves to be shown in a dish that is a little fancier than your average chef's salad with ranch dressing.

Additionally, salads are ideal for keeping things cool indoors because nobody loves to cook on the stove in oppressive heat.

Try these 19 ideas for fresh summer salads to get your fresh on!

1. Kale Salad with Blueberries and Quinoa

This healthy summer recipe of superfood kale salad with blueberries and quinoa makes a lovely side dish to bring to a potluck or serve at a dinner party.

Beets are one of my favorite vegetables and I believe they are underused in salads. They enhance the dish with a pleasant sweetness, some crunch, and of course that stunningly vivid color!

This super-healthy salad also includes kale, blueberries, cucumbers, and avocado in addition to beets. One of the best recipes for a summer salad is this one.

2. Greek Orzo Salad

Greek Orzo Salad is healthy, delicious, and packed with fresh veggies! This pasta salad is the perfect side dish for summer parties, picnics, and potlucks.

My favorite part of this salad is the chickpeas. They add some healthy protein to the recipe without using meat. It’s the perfect lunch or dinner meal for vegetarians.

For non-vegetarians, it would also be delicious with chicken, shrimp, or salmon added to it.

Make this summer salad late in the summer with freshly picked produce from your garden! Fresh cucumbers, tomatoes, and onions would really make it pop.

3. The Best Summer Tomato Salad

With just a few ingredients, this fresh tomato salad couldn't be any simpler to make. Furthermore, it is unimaginably healthy!

This meal is the ideal way to showcase the amazingly delicious flavor of freshly-picked tomatoes if you're a tomato enthusiast (like I am).

The tomato in the picture is a typical red tomato, but I believe adding some pink or yellow heirlooms would provide a delightful range of flavors.

This salad would obviously make a lovely side dish for a picnic or gathering. Serve it with some toasted bread and fresh mozzarella cheese to turn it into a meal unto itself. Yummy.

4. Mango Cucumber Summer Slaw

This recipe makes a very unique coleslaw. However, once you give it a try, you might never return to the conventional variety.

The mango adds a sweet flavor to counteract the jalapeno's spiciness. Compared to the mayo-heavy variant, the sauce is also significantly lighter.

The cool and refreshing side dish mango cucumber summer slaw is ideal for hot weather. It is the ideal addition to your summer BBQ and just takes 15 minutes to make.

5. Summer BLT Chopped Salad

My absolute favorite salads are chopped salads. When it comes to salads, bacon is a salad staple. A hard-boiled egg on top of this recipe, in my opinion, would make it much more delicious and filling.

Despite the fact that fresh corn should be taken off the cob and used raw, this recipe calls for cooked corn. It offers a delightful crunch and sweetness that are lost when it is cooked.

The feta cheese contributes to the salad's perfectly delightful level of saltiness when combined with the bacon.

6. Summer Peach Salad

I would have never thought to combine these items on my own.

It might sound a little strange to combine peaches, mint, blueberries, avocado, red onion, nuts, and mozzarella, but give it a shot first!

The strong red onions balance out the revivingly sweet flavors of the peaches and blueberries.

I envision myself enjoying this salad for lunch on the veranda on a hot, sunny summer day.

7. Cranberry Almond Broccoli Salad

It's the best recipe for broccoli salad ever! Crunchy almonds, bacon, sunflower seeds, tart cranberries, and a smooth citrus poppyseed dressing are used to make this.

It's fantastic to make for potlucks, BBQs, and other spring/summer gatherings because it's incredibly simple to prepare ahead of time (and really tastes better that way)!

This is something I also enjoy preparing on a Sunday night to have for lunch throughout the work week.

8. Grilled Summer Vegetable Salad

This salad's dressing is somewhat of a free-for-all, but it's still tasty.

I would like to proclaim to the world that more grilled vegetables should be consumed. The sear and smoke from the grill turn the vegetables into culinary paradise.

There is really no other method to make vegetables taste this nice, but roasted vegetables would still be tasty if you don't have a grill.

You may grill any of your favorite summer vegetables, top them with the dressing and cheese, and enjoy a deliciously light and nutritious lunch.

9. Make-Ahead Sunflower Crunch Salad

Do you recall those prepackaged chopped salad kits from the grocery store? This is a fresher and tastier rendition of the handmade dish.

Kale is a great addition to this salad because it is so wholesome and nutritious. Finding kale recipes that disguise its bitterness is always difficult for me. This one performs admirably.

With cranberries, sunflower seeds, and bacon, this summer salad recipe is like coleslaw on steroids. It is fantastic!

10. Honey Mustard Chicken Salad with Bacon and Avocado

Invigorating, sweet, and savory all at once! With a hint of garlic, crispy bacon, creamy avocado slices, juicy tomatoes, and thin red onion slices, this dish has amazing pairings.

This salad is so flavorful that it can be eaten by itself. This was one of my all-time favorite summer salad recipes before I went vegetarian.

Just take a look at that image, I mean. How could you possibly want to succeed?

11. Easy Asian Salad

Fresh and crunchy vegetables make this Asian salad simple to prepare.

The raw ramen noodles in the original recipe sounded incredibly wonderful to me. The comments in the following link contain the recipe.

For summertime cookouts, picnics, and potlucks, the modified version is Whole 30/Keto friendly and makes the ideal lunch or wholesome side dish.

Look no further if you're looking for a delicious and colorful salad to make all summer long!

12. Corn Tomato Avocado Salad

Fresh, uncooked corn on the cob is one of my favorite salad ingredients, as I previously stated. It gives a meal so much flavor and texture.

This salad for summer is essentially a saladized version of a thick salsa. Yum! Even broken or crushed tortilla chips would be a tasty salty garnish.

It is loaded with sweet summer vegetables, which the tart citrus dressing helps to balance. A fresh dinner salad to enjoy on the porch can be made by adding some grilled chicken or fish to the top.

13. Italian Sub Salad

This salad is the “healthy” version of an Italian Sub – no carbs from the bread. Although, I don’t know if I would call pepperoni, salami, cheese, and oil dressing exactly healthy 😉 But, as long as it’s delicious, who cares?

My favorite part of this salad is the banana peppers. They add a delicious spiciness and I could honestly eat them on almost anything.

Bring this salad to a potluck or BBQ and you certainly won’t have any leftovers to take back home.

14. Shrimp and Artichoke Green Salad with Lemon Vinaigrette

This salad is ideal if you enjoy shrimp. Since the image encapsulates everything, let me just mention that it features greens, onions, spicy shrimp, pine nuts, artichokes, and tomatoes, all topped with a delicious lemon vinaigrette.

This summer salad recipe is the ideal balance of heavy and light; after eating it, you'll be satisfied but also energized and not bloated. Delicious!

One of my favorite summery foods is pasta salad. Since everyone has tried the typical Italian pasta salad, I wanted to present an alternative.

16. Cranberry Apple Quinoa Salad

I adore salads where a fruit of some kind is the main ingredient.

This recipe's apples, celery, and pecans give it a pleasantly crunchy texture. The homemade honey mustard dressing keeps you on your toes and gives a great tanginess.

Just by looking at that image, I mean, how are you not immediately rushing to your refrigerator to check if you have the necessary ingredients?

This Cranberry Apple Quinoa Salad is simple to prepare and great for lunch or as a side dish. I enjoy making it on Sundays and eating it for lunch the work week.

17. Easy Chicken Salad

The ideal summertime meal is chicken salad; just spread it on some bread and you can't go wrong.

However, a fresh croissant from a bakery would be much better. This variation uses Greek yogurt instead of mayo, making it less fatty than the classic chicken salad.

18. Pear Salad with Gorgonzola and Candied Walnuts

One of the most underappreciated fruits is the pears. When summer returns and they are abound in the fruit department, I always forget how much I adore them.

In this recipe, the peppery arugula, creamy avocado, robust gorgonzola, crisp red onions, candied walnuts, and straightforward Dijon vinaigrette go wonderfully with the juicy and aromatic pears.

19. Roasted Cauliflower Salad

Cauliflower and chickpeas are roasted in olive oil, smokey chipotle, paprika, and garlic till lightly charred, crunchy, and delectable in this savory salad.

Combine it with a straightforward honey mustard vinaigrette, spring salad greens, cucumbers, fresh herbs, feta cheese, and avocado for a hearty, full salad. Yum!
