A life-changing recipe, it’s made with simple ingredients and requires minimal effort, letting the oven do the hard work. All you have to do is combine the ingredients, set them aside to marinate, and then pop them in the oven! 

Dinner will be on the table before you know it, and the whole family will be gathered around excited to eat. Even better, this recipe can be served on its own or paired with all your favorite sides for a filling meal that makes enough to feed a crowd!

Ingredients You’ll Need

Just a handful of simple ingredients are all you need to create a recipe that will have your guests practically drooling. 
  • Potatoes – We prefer to use Yukon Golden potatoes because they have a softer texture and a more buttery flavor. However, any potatoes you have on hand can be used. 
  • Drumsticks – We prefer to use skin-on drumsticks as the skin gets nice and crispy, but skin-off drumsticks work well, too. 
  • Olive Oil – This forms the base of the marinade, keeping the chicken tender and infusing the dish with flavor. 
  • Lemon Juice – This helps balance out some of the heaviness of the fats, and the acidity keeps the chicken tender. Freshly squeezed lemon juice works best, but bottled varieties can also be used. 
  • Parmesan Cheese – If possible, buy a block of Parmesan, and grate it yourself! 
  • Garlic Cloves – Use whole cloves, and mince them finely. 
  • Seasonings – Smoked paprika, dried oregano, dried thyme, salt, and black pepper create a savory flavor with just a hint of spice. 

The Secret to Making Juicy, Flavorful Chicken Every Time

This baked chicken drumsticks and potatoes recipe is a hands-off dish that requires very minimal effort but yields a big, bold flavor.  
  1. Prepare the Marinade. Add the oil, lemon juice, parmesan, and seasonings to a bowl, and whisk until they’re well combined. 
  2. Marinate the Potatoes. Pour half of the marinade into a sealable bag. Add the potatoes, seal, and toss to coat them with the liquid. Set aside. 
  3. Marinate the Chicken. In a second bag, pour the remaining marinade. Add the chicken, and toss to coat. Set aside to marinate at room temperature. 
  4. Bake. Arrange the potatoes in a single layer on one side of a greased baking sheet. Arrange the chicken drumsticks on the other side. Cover the baking dish with aluminum foil, and transfer it to a preheated oven. Bake until the potatoes are tender and the chicken has reached an internal temperature of 165 degrees Fahrenheit.  
  5. Broil. Remove the foil, and set the oven to broil. Allow the chicken and potatoes to cook under the broiler just until they turn golden brown. Be careful not to burn! 
  6. Flavor. Brush any remaining marinade (not used on the raw chicken) on top, and let the chicken rest for a few minutes. 
  7. Serve. Garnish your baked chicken drumsticks and potatoes with fresh herbs, and enjoy warm!

Ingredients  

  • 1/4 cup olive oil
  • 1 lemon juiced
  • 1/4 cup grated Parmesan cheese
  • 4 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 small Yukon Gold potatoes halved
  • 10 chicken drumsticks

Instructions 

  1. In a bowl, combine the olive oil, lemon juice, grated Parmesan cheese, minced garlic, smoked paprika, dried oregano, dried thyme, salt, and black pepper. Mix well to create the marinade.

  3. Take half of the marinade, and place it in a large resealable plastic bag. Add the halved Yukon Gold potatoes to the bag, seal it, and toss to coat the potatoes thoroughly with the marinade. Set aside.
  4. 10 small Yukon Gold potatoes
  5. Place the chicken drumsticks in another large resealable plastic bag, and pour the remaining marinade over them. Seal the bag, and shake it to coat the chicken evenly with the marinade. Let it marinate for about 15-30 minutes at room temperature.
  6. 10 chicken drumsticks
  7. Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  8. Arrange the marinated potatoes in a single layer on one side of a large baking dish, and place the marinated chicken drumsticks on the other side.
  9. Cover the baking dish with aluminum foil, and place it in the preheated oven. Bake for 45 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  10. Remove the foil from the baking dish. Increase the oven temperature to broil, and place the baking dish back in the oven for 8-10 minutes or until the chicken and potatoes develop a golden brown color. Keep an eye on them to prevent burning.
  11. Once done, remove the baking dish from the oven. Use any reserved marinade (not used on raw chicken) to brush on top of the cooked chicken and potatoes for extra flavor.
  12. Serve the Parmesan Chicken Drumsticks and Roasted Potatoes hot, garnished with fresh herbs like parsley or basil, if desired.
  13. Store in an airtight container in the fridge for up to 3-4 days.
